Mané Júlio was a grandfather and a great farmer in the city where Chef Júlio Pereira was born. This restaurant has in its genes, DNA of our Chef, a son of butchers, a grandson of farmers, born in a village surrounded by the sea. Reason being for the three projects, KAMPO where we honor the meat, AKUA where we have the fish and now KOUVE where we’re dignifying the great farmer his grandfather was.
KOUVE brings Chef Júlio’s vision on a mainly vegetarian cuisine, in its genes is written the essence of the produt and its season. Truthfull, raw and organic are the core of the ingredientes. This is the motto for this restaurant where the sustainability of what we create is respected. We will work with local products in order to promote our circular economy.
Júlio Pereira was born in 1978 in Carvoeira, a small village on the west coast of Portugal, between the Serra de Sintra and the waves of Ericeira and the historic convent of Mafra.
It was in his father’s butchers, in his grandfather’s gardens and in his mother’s kitchen that it all began. In its gene is engraved the essence of the product and its season. In his customs and experiences his passion for cooking would lead him to the Estoril Hotel School in 1993.
With the chef jacket he ran and “ate” the world, passing through Italy where he worked at the Hotel Principe di Piemonte in Torino; Spain with Chef Sergi Arola; Brazil; Angola at the opening of the first 5-star hotel in the country and in Sao Tome and Principe, at the BomBom Hotel in Príncipe island.
